Pumpkin Spice Muffins Two Ingredients

The two ingredients make it easy to whip these muffins up in a flash for a quick gathering or as a holiday gift. Feel free to experiment with additional ingredients based on your taste preferences. Equipment

  • 1 large bowl
  • 1 Large mixing spoon
  • 1 6 muffin pan loaf pan
  • 1 Cooling rack

Ingredients
  

  • 1 15oz 100% Pumpkin Purée 425g
  • 1 15.25oz Spice Cake mix 432g
  • Spray oil prepare baking pan

Optional Additions

  • Pumpkin Seeds Toppings
  • Walnuts Toppings
  • ¼ Tsp Cinnamon extra spice

Instructions
 

  • In a large bowl, empty one box of Spice Cake Mix and one can of 100% Pumpkin Purée.
     (You must be using Pumpkin Puree and Not Pumpkin Pie Mix it is easily confused.)
    Using your large spoon or mixing spatula, mix the two ingredients until combined, ensuring no dry cake mix remains.  
  • Spray your muffin baking pan with A neutral cooking oil such as canola or vegetable spray. A light coat will ensure the muffins come out quickly after baking.
  • Scoop the batter with a medium ice cream scoop or a regular spoon into the muffin tins, filling ¾ full.
  • Optional Step
  • Top your muffins with nuts or seeds of your choice
    Additional spices can be added to the batter or lightly sprinkled on top before baking
  • Preheat the oven to 350 degrees
  • Bake muffins for 13-15 minutes, depending on your oven type.
  • To ensure your muffin is ready, place a small skewer in the middle; if it comes out clean, remove it from the oven.
  • Let the muffins cool on the wire rack for 3 minutes in the muffin pan before removing and placing the baked muffins for the remaining cooling time.
  • Store in an airtight container after completely cooled

Notes

Adjust for cooking times depending on the type of baking pan you are using, i.e., muffin pan or loaf pan.
