Ingredients
  

  • Tsp active dry yeast (1 packet)
  • 1 Cup Warm water (110℉/43℃)
  • 1 Tsp Sugar
  • Cups All-purpose flour
  • Cups 00 Semolina Flour
  • 1 Tsp Salt
  • 2 Tbsp Olive oil

Filling

  • ¼ Cup Tomato sauce (Use the extra sauce for dipping)
  • 6 Ounces mozzarella cheese (Adjust for the amount of panzerotti)
  • 4 Leaves Basil chopped (Optional)

Frying

  • 12-16 Ounces Vegetable or Canola Oil Enough oil to allow panzerotti to float for best results

Optional Sweet Panzerotti

  • 6 Ounces Nutella
  • 1 Banana
  • ½ Cup Powdered Sugar 10x Sugar sift top panzerotti after frying

Instructions
 

  • Combine warm water, one teaspoon of sugar, and yeast in a bowl. Let it sit for 5 minutes until it becomes frothy
  • Pour the yeast mixture and olive oil into the well. Gradually incorporate the flour from the sides into the wet ingredients until a dough forms
  • On a lightly floured surface knead the dough for 5-8 minutes until it becomes smooth and elastic
  • Place the dough in a lightly oiled bowl, cover it with a slightly damp cloth and let it rise in a warm place for 1½ hour or until it doubles in size
    ( Optional: following the same steps except cover with plastic wrap placing dough in the refrigerator overnight to rise. You can leave it for up to 72 hours. Bring to room temperature before shaping
  • Punch down the risen dough and divide it into 10-12 small balls, placing them on a sheet pan covered with cloth to rise for 30 minutes while you prepare your fillings and frying vessel
  • Lightly press or roll out each portion into circles, adding a spoonful of your filling of choice: Monzerella and tomato or Nutella and banan. Important not to overfill. Fold the dough over to form the panzerotti
  • Seal the edges properly by pressing firmly around the outer edges to prevent the filling from leaking out during frying.
  • Frying tempture should be a consistent 350°-375° or 175℃-190℃ to achieve a crispy and golden exterior without burning the dough.
  • Frying time may vary depending on filling average time is 3-4 minutes for freshly made panzerotti making sure your filling is fully cooked.
  • Remove from the fryer or skillet and place on a sheet pan lined with paper towels to drain and cool slightly before serving.

Filling Monzzarella & Tomato Sauce

  • In a bowl combine diced fresh mozzarella, tomato sauce, chopped basil. Mix together

Filling Nutella & Banana

  • Slice one ripe but slightly firm banana into small cubes
  • Taking the Nutella directly from the jar you can assemble your sweet panzerotti placing Nutella down on the dough followed by a couple chunks of banana
