Rainbow Sprinkles

Sprinkles not only add splashes of whimsical colors to your desserts and baked goods, but smiles will also be brought to your guests and family. This easy technique is an easy and affordable way to make any flavor or color theme sprinkles at home. Once you complete these, you might never return to the store-bought sprinkles again.

Sprinkles Recipe

Prep Time: 30 minutes Drying Time 1 hour

Equipment
  • Medium mixing bowl
  • 4 small bowl (additional for each color)
  • Whisk
  • Spatula or Large Spoon
  • Measuring Cups
  • Measuring Spoons
  • Parchment Paper

Ingredients

  • 1/4 tsp. Pure Vanilla Extract
  • 1 Large Egg White
  • 2 cups-240 grams Confectioners Sugar (10x powdered sugar)
  • Kosher Salt
  • Gel Food Coloring (desired color)
  • Water (as needed)

Steps

In your mixing bowl, whisk one egg white (room temp.), then add the following     ingredients

· 1/4 tsp. of Pure Vanilla Extract

· Pinch of Kosher Salt

· Add 1 cup of powdered sugar pre-sifted to the bowl; whisk together. 

Switching from a whisk to using the spatula, continue to fold together. Mixing in the next 1 cup of powdered sugar. Continue to mix until the dough becomes a thick paste texture.

· Knead the mixture just until it will hold its shape.

· Roll the dough in a log shape

· Divide the dough into the four small bowls or more bowls for additional colors

· Add desired color to each bowl. Gel food coloring works best due to the low moisture content and brighter colors. If you use liquid food coloring, use three drops, then adjust the powder sugar if needed for the extra moisture.

· Knead the gel food coloring into each ball of dough until thoroughly incorporated

· Keep bowls covered while working with dough to prevent them from drying out before rolling

Tips

If you find your sprinkle mixture is too wet. Add a small amount of sifted powdered sugar while kneading it until it holds its shape. On the other hand, if the sprinkle dough is slightly dry, the gel food coloring should correct the moisture content or add a scant amount of water. A misting bottle works best.

Make room on your workspace for the rainbow sprinkles to dry unmoved for at least an hour. Overnight always works best. After rolling the sprinkles, I suggest placing them on a cookie sheet lined with parchment in a cold oven overnight. It’s cool and dry in the morning. The sprinkles will be ready.

Time to Roll

· Take one bowl at a time and pinch off a small dough ball. Time to go retro back to the preschooler in you. Rolling dough making skinny snakes and logs. Thin and Skinny logs will do the trick. 

· Leave the thin logs on the parchment and move on to the next pinch of dough. Repeat until all bowls are rolled out and laid out to dry.

· After at least an hour, if not overnight, to make your rainbow mixture. 

· Using a knife cut the size you would like. Vary sizes look fresh and fun. It doesn’t matter if some break. They are all beautifully perfect.

Note: While choosing a theme color or flavor, you are only limited by your creativity. The flavors, thickness, shapes, and length is up to you to customize for all your dessert needs. Everyone will taste the difference. You deserve full bragging rights!

Additional Note: If you have referenced my Lemon Royal Icing recipe and have any left over from your projects. Use a piping or zip bag with a corner snipped to make long lines on parchment paper with the exact directions above. Your sprinkles will be thinner and more delicate, but it is an excellent way not to waste any of your delicious icings.

Storage

Sprinkles will keep for months if wrapped and stored in a cool, dry place. Small storage containers will keep sprinkles from crumbling, unlike zip storage bags. Keep in mind moisture is not your friend! I use a tiny bit of paper towel or a small bit of rice in a tea sac in my containers to ensure all dampness is kept out.
